Prepare and Grill Shrimp
For us the easiest way to cook shrimp is on a stick! It is easy to prepare the night before and season. You can try this Greek saganaki recipe at home but we have to make something that is quick and ready to grill for customers to pick-up and get back to work.
We make sure that the shrimp is deveined, cleaned, and of course we have to add lemon, olive oil, salt, pepper, and oregano. We marinade them in a pineapple with 1 (that is all you need) habanero in a sauce to marinade over-night.
We like to grill the skewers at the truck once customer’s order because they get fresh food right when they ask for it. This particular special comes with rice and Greek Salad. We pack two wooden skewers from end-to-end and grill right at the truck.
