This week has definitely warmed up and we’re loving the extra visits at the truck!
We’re using beef as our main protein today in our Kokkinisto. If you haven’t had the Kokkinisto before, it is our Reddened Beef Stew in red wine sauce. The good thing about making this recipe is that you can use any type of protein and cook it in this delicious sauce.
You can add octopus, chicken, or even a portobello mushroom to soak up the juicy stew.
Pairing it with pasta or even Greek roasted potatoes can be an alternative if you cook this at home. We pair it with rice and salad. If you have stew left order, add a wheat or white pita.
Even our crispy Greek seasoned fries, soaking up the extra stew, would be a good idea.
