Vegetable Picking with the Family
Over the weekend we went to the Latham’s Farm Stand with our mom Katerina, our daughter Katerina, and Elena. They had tons of fresh, locally grown, vegetables and as you can see lots of tomatoes. Today’s Special Tomato Gemista and Lemon Potatoes
With the tons of tomatoes we brought home, we had more than enough to make today’s special. This is a new combination platter of tomato gemista and oven roasted lemon potatoes. The tomatoes are slow roasted in the oven and stuffed with Greek herbs, beef and rice. The lemon potatoes are covered in an olive oil and lemon vinaigrette and then roasted until they are tender and crispy.
