Here we are and it’s Tuesday. We had a long weekend thanks to the Presidents and we did lots of food prep over the weekend (sorry for making you go somewhere else for lunch yesterday.) We hope everyone enjoyed their Valentines Day on Friday. We have a busy week and short week ahead of us so here are the Specials for today.
Today’s Specials Stuffed Green Peppers Gemista
Gemista in Greek means a stuffed vegetable; peppers, tomatoes, or any other vegetable. Our stuffing is rice and meat in a tomato sauce base. Some people make Gemista without meat and with the avgolemono base (egg and lemon). You may have had Dolma which is the stuffed leaves at restaurants or at the truck.
This is a good recipe all year around and we serve this with a Greek Salad. The trick is to slow roast in a pan but not let the peppers get to soggy with filling. We hope you enjoy the hard work Mom and Elena put into this dish.
We also have the Baklava for those who have room left for dessert and we know you will! It’s Winter and we need the extra layers to keep us warm. You can try Michael Symon’s recipe at home or just come get it made from Mom! This dish is a layers of phyllo dough, nuts, cinnamon, and honey.
